Description
Pang Khon Giants Hilltribe coffee is a rare treasure from northern Thailand. Grown at an altitude of about 1,300 meters, it benefits from a constant climate that allows the coffee cherries to ripen perfectly. The Arabica Yellow & Red Caturra and Catimor varieties are carefully cultivated and harvested by hand, ensuring that only optimally ripe cherries are selected.
From mid-November to mid-March, each cherry is picked with precision by local farmers. Green or overripe cherries, accidentally harvested, are immediately sorted out at the beginning of the process. The post-harvest treatment is equally meticulous: fermentation in tiled tanks for about 36 hours, washing in fresh water, and sun-drying on bamboo mats for 12 to 22 days depending on the weather.
The result is a refined coffee that reflects both the dedication and artisanal expertise of Thai growers. Pang Khon Giants Hilltribe delights from the very first sip with a smooth chocolate-like aroma, complemented by subtle nutty notes. A light citrus acidity brings freshness and elegance, while the finish is full-bodied, lingering and delicately marked by caramel.
