Blend and vinification
This cuvée is made exclusively from Pinot Noir coming from five lieux-dits north of Gevrey, selected for their complementarity: En Motrot, Au Vellé, Combe du Dessus, En Champs and En Derée. The vines, many of them old, accurately express the depth of the limestone soils and the tension of cool exposures. Harvesting was done by hand, with meticulous sorting. In cellar, a share of whole clusters was retained, about one third, to bring lift, floral complexity and length on the palate. Fermentations took place with indigenous yeasts to preserve the site’s signature. Ageing, carried out over 18 months in barrels with a measured proportion of new oak, 25%, supported the texture without dominating it. Bottling was carried out without fining or filtration to preserve the fruit’s brightness, natural density and the vintage’s vibrancy.
