This Blanc de Noirs owes its character to an equal blend of Pinot Noir (50 %) and Pinot Meunier (50 %), coming mainly from the Montagne de Reims, the Côte des Bar and the Vallée de la Marne. Around 30 to 35 % reserve wines enrich the cuvée, ensuring depth, consistency and complexity. The house also maintains a solera of Pinot Noirs, made up chiefly of Premier and Grand Crus, a true aromatic memory that provides an additional, flavorful and harmonious layer. Vinification is carried out in tank, with malolactic fermentation completed to refine the material and round the texture. The wine is then aged for about 3 years on the lees, which refines the mousse and shapes a broader palate.
