Assembly and vinification

Made from 100% Chardonnay, Bougros 2021 comes from an emblematic slope of 6.23 hectares, south-west facing, where clays and marls lie between 130 and 170 m altitude. Hand harvesting preserves the integrity of the berries, which are immediately taken for gentle pneumatic pressing. Fermentation takes place in stainless steel tanks and in barrels, with ageing continued for 14 to 15 months on fine lees. Approximately 50 to 60% of the blend matures in oak barrels that have already been used, roughly 6 years of service, to refine the material without overloading aromatics. The remainder stays in stainless steel, ensuring the wine's pure line and crystalline freshness. This nuanced, controlled ageing sculpts a fleshy, firm and well-held palate while preserving the mineral thread that defines the finest Chablis Grand Cru.
