Assemblage et vinification

The grapes, hand-picked and sorted in the vineyard, are gently crushed before a slow pneumatic pressing, ensuring precise juice extraction. After a light settling, the must is racked into 228 L French oak barrels, of which approximately 15 % new, to add structure and complexity without excess. Alcoholic and malolactic fermentations take place naturally, driven by indigenous yeasts and bacteria, for the most faithful expression of the site. The 18 months on fine lees, without bâtonnage, nourishes texture and depth while preserving mineral energy. One month before bottling, the barrels are blended into stainless steel tanks, then the wine undergoes a light fining and gentle filtration. Bottling follows the lunar calendar, in the spirit of viticulture attentive to natural rhythms.
