Made from 100% Pinot Noir, this Burgundy AOC comes from a blend of three parcels located between Savigny-lès-Beaune and Pommard, on brown clay-limestone soils that give the wine its mineral backbone and sap vigour. Hand-harvested grapes ensure careful berry selection and preservation of integrity. After de-stemming, a cold pre-fermentation maceration of 15–18 days promotes the extraction of delicate aromas and a luminous colour while respecting the grape’s finesse. The alcoholic fermentation, carried out over 5–6 days, is managed precisely to preserve the fruit’s crunch. The 15 months in barrels, with 33% new and the remainder in one- to two-wine barrels, adds dimensionality to the texture, softens the tannic frame and wraps the bouquet in a fine oak touch without ever dominating it. A sustainable approach in the vineyard and a measured cellar practice allow the wine to express its terroir with honesty and distinction.
