This grape variety, better known as Pinot Gris, finds a unique expression here on an upper hillside advantageously facing south-east, where clay-limestone soils bring uprightness, brightness and precision. The cuvée is the result of meticulous work, from hand-harvesting to patient lees aging, delivering a full-bodied, aromatic white wine framed by noble freshness. Assemblage et vinification
Produced exclusively from Pinot Beurot, this Bourgogne AOC celebrates the rare identity of a heritage grape. The grapes are hand-harvested to preserve the integrity of the berries, then gently pressed in a pneumatic press to extract a pure, precise juice. Low-temperature fermentation preserves aromatic intensity, fruit clarity and a mouthwatering tension. The 5 months aging in oak barrels, combining new wood and barrels of one to four wines, is carried out on lees to develop texture, weight and complexity. An additional 2 months' refinement in tank completes the overall harmony, providing perfect balance between flesh and freshness.
