Hautes-Côtes de Nuits « Les Petites Corvées » 2023 du Domaine Aegerter is a precisely styled Pinot Noir shaped on the limestone heights of the plateau de Chaux. Hand-harvested, carefully destemmed and given a 2 to 4-day pre-fermentation maceration in stainless steel tanks to refine the material, before an 8 months' ageing in demi-muid that polishes the contours. The ruby robe introduces a bouquet of black fruit and ripe cherry, lifted by spices and a hint of liquorice. The palate, svelte and flavoursome, extends to a fine length. A refined Burgundy red, conceived for gastronomy and discerning moments of sharing.

Description

A reference for northern Burgundy, the cuvée Hautes-Côtes de Nuits « Les Petites Corvées » 2023 from Domaine Aegerter captures the airy elegance of the high slopes and magnifies their purity. On the plateau de Chaux, between 300 and 400 m elevation, the clay-limestone soils deliver a candid expression of Pinot Noir, combining aromatic precision with structural freshness. Here, the fruit unfolds without exaggeration, supported by meticulous cellar work that favours straightness and balance. The 2023 vintage reveals a bright, generous palate, a juicy backbone and finely wrapped tannins, like a subtle ink stroke on laid paper. From attack to finish, everything speaks of restraint, coherence and the poetic delicacy that distinguishes hillside wines. You will find a well-appointed table companion, able to accompany sincere, refined cooking, but also a wine for contemplation to be enjoyed in the calm of an evening, when conversation softens and the aromas deepen.

Assemblage et vinification

This cuvée is made exclusively from Pinot Noir of the 2023 vintage. The estate practices hand-harvesting, followed by careful destemming to preserve juice finesse and fruit clarity. A 2 to 4-day pre-fermentation maceration in stainless steel tanks promotes delicate extraction of aromatic compounds and colour while respecting the identity of the terroir. Fermentation, conducted with precision, favours the expression of black fruit and a lithe mouthfeel. The 8 months' ageing in demi-muid completes the ensemble, bringing a more caressing texture, notes of gentle spice and added depth without ever dominating the grape's original character. This measured approach yields an enthusiastically classic wine, where purity and aromatic clarity prevail over show, offering a clear reading of the Hautes-Côtes terroir.

Notes de dégustation

  • Colour : Clear, bright ruby of moderate intensity, suggesting freshness and finesse while indicating controlled concentration.
  • Nose : Precise bouquet of black fruits and ripe cherry, enlivened by fine spices. Delicate undergrowth notes blend with a trace of liquorice, evoking the verticality of the terroir and the correctness of the ageing.
  • Palate : Soft attack then a build in intensity, with juicy flesh and velvety tannins. The structure remains upright, held by a salivating freshness, and stretches into a long, pleasing finish on black fruits and a touch of spice.

Serving temperature and tips

Serve this wine in tulip-shaped glasses that concentrate the bouquet and allow the texture to unfold. A brief exposure to air at the time of service is enough to reveal the fruit and spice nuances without disturbing the balance. Store bottles in a calm place, protected from temperature fluctuations and light. Enjoyable now for its fruit brightness, this wine also has the structure to develop harmoniously over a few years, gaining aromatic complexity and integrated texture.

Food and wine pairings

  • Aperitifs : golden gougères, thinly sliced artisanal saucisson, country terrine with herbs.
  • Starters : œuf en meurette, beef carpaccio, veal tartare with capers.
  • Main courses : roasted free-range poultry, seared duck breast, herb-crusted veal chop with reduced jus.
  • Cheeses : Brillat-Savarin, fruity Comté, young Époisses for a controlled, characterful match.
  • Desserts : black cherry clafoutis, thin tart of red berries with little sugar, echoing the Pinot Noir profile.

The Hautes-Côtes de Nuits « Les Petites Corvées » 2023 suits moments where elegance meets refined simplicity:

  • A dinner for connoisseurs, where conversation follows the wine's grace.
  • A seasonal, sincere kitchen that showcases its precision.
  • A thoughtful gift for a Burgundy lover seeking a racé, harmonious red.
