Blend and Winemaking
Château Coutet 2012 is composed primarily of Sémillon (75%), complemented by Sauvignon Blanc (23%) and Muscadelle (2%). Harvesting is done entirely by hand, in multiple passes, selecting only grapes affected by Botrytis cinerea, the noble rot responsible for Sauternes’ signature sweetness. Fermentation takes place in oak barrels, followed by 18 months of aging in French oak. This precise vinification gives the wine its silky texture and remarkable aromatic complexity.
