On the sands and clays of La Janasse and La Crau, the Grenache Blanc, Clairette and Roussanne trio composes a wine that is both expansive and refined. Hand-picked into small crates to preserve berry integrity, the grapes are worked with meticulous attention to detail, true to the Sabon signature. This cuvée follows the grand tradition of Châteauneuf-du-Pape whites, where the terroir’s natural generosity meets a frank energy, serving inspired gastronomy. The 2024 vintage reveals ripe fruit purity, enhanced by measured élevage that brings relief, texture and long-lasting persistence. Assemblage et vinification

The cuvée blends Grenache Blanc (40%) and Clairette (40%) for floral precision and luminous flesh, with Roussanne (20%) for shape and aromatic depth. Harvests are hand-picked into small crates, an essential precaution to preserve juice freshness and avoid premature oxidation. Maturation lasts 7 months and favours harmony over show, with lees stirring to add richness and complexity. Grenache Blanc and Clairette rest in concrete vats, a neutral environment that preserves fruit purity and mineral cadence. The Roussanne is raised in barrels, 80% new, for precise, creamy oak with fine vanilla notes. This finely tuned orchestration aims for balance, avoiding heaviness, and delivers a textured, energetic and well-defined white, with alcohol contained around 13–14%. The Janasse style is affirmed here: clarity, restraint and a keen sense of aromatic timing.
