In the glass, incisive freshness blends with vinous flesh, floral nuances meet toasty grain, composing a classic score where balance is the hallmark. It complements the aperitif with breadth, carries through effortlessly with delicate cuisine and keeps conversation lively, thanks to a luminous finish recalling ripe fruit. A showpiece bottle, but above all a wine of pleasure, equally at ease in an exceptional cocktail or during a carefully orchestrated dinner.
Blend and vinification
The Brut Classic is distinguished by an equal-parts blend of Pinot Noir, Chardonnay and Pinot Meunier, selected from 20 to 30 crus in the Marne, including villages from the Montagne de Reims, the Côte des Blancs, the Vallée de la Marne and the Côte des Bar. This mosaic of terroirs composes a gustatory landscape of great coherence. The inclusion of 20 to 40% reserve wines ensures the Deutz signature of uprightness, consistency and depth. Vinified in tanks and raised in tanks prior to the secondary fermentation, the wine benefits from a malolactic fermentation conducted to perfect the harmony. The dosage is that of a Brut, in the classic range of 6 to 12 g/L, designed to emphasise freshness without hiding the vinosity. In the large-format Mathusalem 6 L, the slow evolution in bottle favours a restrained effervescence and an even silkier texture, offering a broad, continuous reading of the house style at every service.
Tasting notes
- Colour: Luminous gold threaded with a string of very fine bubbles. The brightness suggests the energy of the Chardonnay, while the regularity of the effervescence announces a delicately creamy texture on the palate.
- Nose: Initially floral, evoking hawthorn and white flowers, then more indulgent with notes of toasted bread, almond paste and ripe fruits between apple and pear. The whole breathes clarity and restraint, with a friendly patina brought by the reserve wines.
- Palate: A fresh, precise attack carried by the Chardonnay’s brightness. Pinot Noir and Meunier bring creaminess, flesh and a smooth vinosity. The texture becomes satiny, the bubbles carve the wine without harshness, and the finish stretches out with a clear, inviting fruity persistence.
Serving temperature and advice
Serve between 10 and 12°C in tulip-shaped glasses to open the floral palette and the brioche thread. A Mathusalem format requires particular attention to cooling. Provide a generous ice bucket, half water, half ice, to achieve an even temperature at the heart of the bottle. Allow the bottle to rest chilled well in advance, then keep it in the bucket between services to preserve the finesse of the bubbles. Open calmly, holding the cork and the wire cage with a steady hand. Decanting is not recommended in order to preserve the effervescence; prefer regular service in suitable glasses, which provide an exchange surface conducive to the revelation of the bouquet. Once the first glass is poured, wait a few moments for the aromas to unfold and the texture to reach fullness. On the table, the stature of this large format creates a ritual as much as a serving convenience, each guest enjoying intact effervescence throughout the meal.
