Blend and vinification

The grapes come from terraces of rolled pebbles laid over red sandy clays and areas of safres, providing accumulated warmth, optimal drainage and a discreet salinity on the finish. Vinification prioritises fruit integrity, with around 80% of the bunches destemmed and 20% of Grenache left whole-cluster to add aromatic complexity and a silky structure. Crushing remains gentle, and maceration can extend up to six weeks depending on the lots, aiming to extract finesse and depth rather than brute force. Ageing lasts 12 months in carefully selected oak barrels, complemented by approximately 20% in concrete tanks to preserve fruit brightness and the wine’s energy. This balance of oak and substance enhances the spicy thread while respecting the vintage’s sap.

Tasting notes

  • Colour: Deep garnet with dark highlights, shiny and dense, it catches the light and reveals promising concentration. The viscosity suggests ample substance where fruit ripeness is expressed without heaviness.
  • Nose: Opens on liquorice and plum, followed by a procession of candied raisin, mocha, cocoa and sweet spices. Notes of well-worn leather, forest floor and a hint of smoke follow. The whole remains precise, driven by freshness that balances the vintage’s sunny expression.
