Blend and winemaking

This Blanc de Blancs is made from 100% Chardonnay harvested on the La Côte parcel in the heart of Avize, a terroir classified Grand Cru whose chalky soils give a distinctive mineral tension. Between 15 and 20% of the juices are aged in oak foudre to bring a subtly spiced, patinated framework that sculpts the texture without ever weighing it down. The cuvée then undergoes a long rest of 5 years in the cellar, a necessary time for the development of dried fruit notes, the integration of candied citrus and the emergence of an extremely delicate mousse. This dialogue between fine wood, active limestone and patient ageing produces a pure, taut and luminous wine, whose maturity expresses itself with restraint, in a rare balance between uprightness and caress.
