Description

Coming from the airy slopes of the Bourgogne Hautes-Côtes de Beaune appellation, the Hautes-Côtes de Beaune 2023 - Jean-Charles Fagot - Hautes-Côtes de Beaune AOC celebrates the elegance of high-altitude Chardonnay. South and south-east facing vines, between 290 and 485 metres altitude, ripen more slowly, preserving aromatic purity and tension. The generous, luminous 2023 vintage finds here a fresh, precise and deeply sapid expression. Like a clear brushstroke on a mineral canvas, this wine composes a picture of floral and citrus aromas, lifted by white fruit and a discreet salinity. Designed for the table, it pairs effortlessly with contemporary cuisine in an almost musical way, while remaining accessible to the enthusiast seeking sincerity, balance and character. At Louvins, we selected it for its accuracy, clarity and its ability to combine gourmandise and structure, qualities prized in great white Burgundies.

Assemblage et vinification

This white wine is made from Chardonnay, the emblematic grape of the Hautes-Côtes de Beaune whites. The higher, cooler slopes provide measured ripening that delivers a lithe, crystalline profile. In 2023 the harvest produced berries both aromatic and taut, allowing a pure fruit expression without excess. The approach of the house Jean-Charles Fagot favours grape integrity and terroir readability, preserving a very clear framework, highlighted by the characteristic limestone minerality. The careful ageing aims to retain the finesse of the bouquet, the precision of the citrus notes and the uprightness of the mouthfeel. The result is a harmonious white, vibrant with freshness, ready to converse with fine gastronomy where textures and flavours agree, never overpowering nor fading away.

Notes de dégustation

  • Colour : Bright pale yellow with silvery highlights, clear, announcing a fresh thread and a taut palate.
  • Nose : Floral bouquet of acacia and hawthorn, finely cut citrus, a lift of fresh lemon and zest, then quince and white peach on a delicate chalky background.
  • Palate : Straight, savoury attack, a fruity and finely textured mid-palate, chalky minerality and an extended finish punctuated by a saline note that invites the next sip.

Service temperature and advice

Serve this Hautes-Côtes de Beaune white between 11–13°C in tulip-shaped glasses to reveal the finesse of the bouquet and the structure of its freshness. A few minutes of airing is enough to free the floral and lemony notes. Store bottles on their side, protected from vibration and light, with stable humidity. The wine can be enjoyed today for its frank energy and brightness. It also has a cellaring potential of 2–5 years, during which floral accents will gain complexity and the palate will round out without losing its drive. Serve it at the start of a meal to set a lively, precise rhythm, or in the heart of a menu where delicate textures meet enlivening acidity.

Food pairings

  • Aperitifs : gougères, herb tartlets, light fish rillettes.
  • Starters : sea bream carpaccio, subtly citrus ceviche, white asparagus with light sauce, fine crab rillettes.
  • Main courses : trout meunière, poached line-caught fish, roast poultry with herbs, seasonal vegetable risotto, pike quenelles with light sauce.
  • Cheeses : crottin de chèvre, fresh tomme, young comté, chilled Brillat-Savarin.
  • Plant-based cuisine : sautéed oyster mushrooms, creamy parmesan polenta, roasted root vegetables with preserved lemon.

Moments to enjoy

This Hautes-Côtes de Beaune is the companion to an unshowy, well-set table where pairing precision and conversation are celebrated. Its aerial freshness makes it a favourite for convivial moments as well as more structured meals.

  • For a Sunday lunch around a golden roast poultry and market vegetables.
  • At a gourmet dinner focused on delicate fish and silky textures.
  • As an epicurean gift for those who appreciate the precision of great Burgundian whites.
