Lying in the immediate vicinity of the Bonnes-Mares Grand Cru, this plot offers a subtle reading of Chambolle’s grace, between tactile finesse and aromatic depth. Biodynamic farming is rigorously practiced, harvesting is done by hand, and every cellar intervention preserves the fruit’s radiance and the site’s sap. For the informed lover seeking emotion, or the collector dreaming of a major Burgundy destined to blossom, this cuvée is a cornerstone—made of nuance, precision and length. An exceptional creation that transcends the ordinary to reveal the French art of living, in the true spirit of a timeless 1er Cru.

Blend and vinification

Made from Pinot Noir under biodynamic cultivation, this wine comes from vines rooted in limestone and clay-limestone soils riddled with stones, lying beneath the influence of the Bonnes-Mares Grand Cru. Hand-harvesting allows for strict grape selection. A 7-day cold maceration precedes a 21-day fermentation to refine extraction and preserve aromatic integrity. 15 months ageing in oak barrels, with around 30% new oak, together with a carefully managed malolactic fermentation, bring structure and harmony without masking the terroir’s character. Everything here serves purity, clarity of the lieu-dit and palate persistence, seeking a balance between intensity, grace and inner energy.

  • Appearance: Bright and clear, with a delicate weave, it announces controlled depth and sparkling purity.
  • Nose: Complex and nuanced, opening on blackcurrant cream and black cherry, joined by peony and dried rose. An appetising hint of cured bacon intertwines with Sichuan pepper, cocoa and liquorice, for a bouquet both sensual and precise.
  • Palate: The attack is supple, then the matter blossoms, silky and expansive. The elegant frame carries plump fruit, the tannins already smoothed unfold a continuous caress. Balance asserts itself—long and harmonious—on a persistent finish with echoes of fine spices and flowers.

Serving temperature and advice

Serve this 1er Cru at cellar temperature, around 15 to 16°C, in a large glass suited to Pinot Noir to favour the expression of florals and spices. A light decanting of about one hour in its youth will refine the texture and release the bouquet’s complexity. This cuvée will gain harmony with time, revealing an increasingly filigreed architecture. Drink from 2029; it will reach its peak between 2031 and 2039, with a cellaring potential up to 2045+ under optimal conditions.
