Made exclusively from Pinot Noir, this wine is driven by the artisanal exacting standards of Maison Albert Bichot and by the setting of Domaine du Pavillon in Pommard. The luminous 2023 vintage reveals a finely chiseled bouquet of red and black fruits, supported by elegant floral notes and subtle spice. Hand-harvested, subjected to extended maceration and then aged in oak barrels with a measured proportion of new oak, it delivers broad texture, finely edged tannins and a finish that stretches out with assurance. At the table it celebrates robust cuisine, elevates roasted meats, tames game and converses with matured cheeses. This Burgundy red is made from Pinot Noir hand-harvested on the Aloxe-Corton AOC terroirs. An extended maceration, around 18 to 21 days, promotes delicate extraction of colour and tannins while preserving the brightness of the fruit. The élevage lasts 14 to 16 months in oak barrels, with approximately 20 to 30 percent new oak, to bring complexity and definition without ever masking the grape's identity.
