€18.00 /L
Cuvée Chabaud 2024 - Château Yssole - Côtes de Provence AOP is a gastronomy rosé that captures the luminous spirit of Provence. Made from a precise blend of Grenache, Cinsault and Syrah, vinified in temperature-controlled stainless steel tanks with direct pressing, night harvests and cold settling for 48 h, it reveals a delicate colour, aromas of white peach and strawberry, then a fresh, mineral and finely structured palate. Ideal as an aperitif or at the table, it elevates anchoïade, tapenade, delicate charcuterie and grilled fish. A terroir-driven signature, elegant and precise, to enhance your shared moments.
Description
Born under the southern light and shaped by the rigour of the winemaker's hand, the Cuvée Chabaud 2024 from Château Yssole embodies the art of a Provençal rosé conceived as much for the table as for contemplation. On the clay-limestone soils of the Var, the 18-hectare estate delivers a clear reading of the terroir, where the finesse of the aromas meets a mineral thread that is both precise and caressing. This wine is aimed at connoisseurs seeking a precise, chiselled rosé whose freshness does not preclude charm or length. It answers the desire for a suspended moment, when apparent simplicity conceals meticulous orchestration. Inspired by the spirit of Matisse's cut-outs and conceived as a sensitive tribute to Jean-Luc Aegerter, this cuvée cultivates the evident character of Provence with an extra touch of soul. It stands out through a rare balance between aromatic expression, purity of execution and tactile elegance, offering an ideal companion for refined aperitifs, Mediterranean-flavoured plates and summer tables where the French art of living takes full meaning.
Assemblage et vinification
This Côtes de Provence AOP combines three emblematic grape varieties, judiciously proportioned for freshness, generosity and structure in the mouth : Grenache 50%, Cinsault 30% and Syrah 20%. The grapes, harvested at night in crates to preserve their aromatic integrity, are handled by direct pressing to capture the finesse of the juices. The cold settling for 48 h clarifies the musts and refines varietal expression without heaviness. Fermentation takes place in temperature-controlled stainless steel tanks, ensuring precise temperature management and an outstanding aromatic purity. The approach aims for clarity, straightness and a subtle palette, with measured extraction to preserve a delicate colour and a lively texture. Each step, from sorting to short ageing on fine lees, converges towards a straight and luminous style where the minerality characteristic of the clay-limestone soils expresses itself with precision.
Notes de dégustation
- Appearance : Pale pink with bright highlights, crystalline, suggesting a clarity of line and contemporary elegance.
- Nose : Delicate and nuanced, with white peach, fresh strawberry and fine floral hints, lifted by a touch of citrus that enlivens the whole.
- Palate : Clean, lively attack, mid-palate tightened by a precise mineral thread, supple flesh and an elongated, savoury finish carried by a chiseled freshness.
Température de service et conseils
Serve between 8 and 10°C in white wine tulip glasses to preserve aromatic tension and showcase the delicacy of the fruit. Opening the bottle a few minutes before service is enough to reveal the bouquet without forcing it. Avoid overly cold temperatures that mute the palette. Protect the bottle from light and temperature fluctuations to retain all the fruit's vibrancy. This cuvée is best enjoyed in its youth, when freshness, mineral relief and floral delicacy speak with the greatest truth.
Accords mets et vin
- Aperitifs : anchoïade, tapenade, crunchy vegetables with olive oil, herb focaccia.
- Starters : sea bream carpaccio with citrus, reinvented Niçoise salad, tuna tartare with raspberry.
- Main courses : grilled fish, pan-seared prawns, free-range chicken with preserved lemon, Mediterranean herb-driven cuisine.
- Cheeses : fresh goat, light tomme, young sheep cheese with milky aromas.
- Desserts : lightly sweetened thin red fruit tart, citrus salad with mild olive oil.
