The vineyard, managed with precision viticulture, has a planting density between 8,000 and 10,000 vines per hectare. Grapes are hand-picked into crates, then receive an initial sort in the vineyard followed by a manual sorting on a vibrating table. After destemming, a density-sorting step completes this selection. The harvest is then cooled in a cryogenic tunnel by spraying liquid nitrogen, before being filled by gravity. Vinification takes place in small-capacity wooden and cement tanks. A pre-fermentation maceration at 8 °C precedes alcoholic fermentation at a low temperature, conducted at 28 °C. Punch-downs are done entirely by hand and maceration lasts 25 to 32 days. This succession of operations reflects a demanding conception of wine, where the raw material is guided with care rather than forced.
